Obata Shuzo is a family-owned sake brewery located on Sado Island in Niigata Prefecture, Japan. Founded in 1892 by Yososaku Obata, the brewery has been dedicated to crafting high-quality sake for over a century. The Kura is surrounded by two large mountains, which cause a faster runoff of the rain and extract most of the contained minerals. Thereby, the water used for sake brewing is soft and smooth. Their guiding philosophy, emphasizes harmonizing four treasures: rice, water, brewers, and the local environment of Sado Island.
Obata Shuzo produces sake under the brand name Manotsuru. The brewery collaborates with local farmers to promote environmentally friendly agriculture, contributing to the preservation of Sado Island's biodiversity. This commitment is exemplified by their involvement in creating habitats for the endangered Japanese crested ibis (Toki), a symbol of the island.
In recent years, Obata Shuzo has been aging sake in the tunnels of the historic Sado Gold Mine, leveraging the mine's consistent temperature and light-free environment to develop unique flavor profiles. This innovative approach underscores the brewery's commitment to blending tradition with experimentation. Through its dedication to craftsmanship, environmental stewardship, and innovation, Obata Shuzo continues to produce sake that embodies the rich heritage and natural beauty of Sado Island.
