Sake Ingredients
Rice
Sake is brewed using special sake rice, which has a larger and more concentrated grain than regular table rice. The quality and type of rice used can affect the final flavor of the Sake.
Water
High-quality water is essential for making Sake. The water should be soft, pure, and have the right mineral content.
Kōji
Kōji is a type of fungus that is grown on rice, which helps to break down the rice starch into fermentable sugars. The kōji is added to the rice and water mixture to create a mash.
Yeast
Sake yeast is different from other types of yeast used in brewing beer or wine. The yeast used in Sake brewing is a special strain that is selected for its ability to produce high levels of alcohol while also producing a delicate and complex aromas.

Once a simple Späti, the Reichenberger 36 location was rebuilt from scratch with the help of architects Abcarius Burns, carving out a basement to house a walk-in cooling cell — hidden from view, but the essential heart of our project.
