Yoshida Sake Brewery, established in 1870, is situated in the serene rice fields of Hakusan City, Ishikawa Prefecture. On clear days, the brewery offers a picturesque view of the Hakusan mountain range, embodying the harmony between nature and craftsmanship that defines its sake production. The brewery's flagship brand, Tedorigawa, has been cherished both locally and nationally for over 150 years. In 2020, the brewery celebrated its 150th anniversary, marking the transition to the seventh-generation brewer, Yasuyuki Yoshida. Under his leadership, Yoshida Sake Brewery continues to honour traditional brewing methods while embracing innovation.
A hallmark of their brewing technique is the Yamahai method, a traditional and labor-intensive process that relies on naturally occurring lactic acid bacteria. This method imparts a gentle acidity and delicate umami to their sake, resulting in a balanced and refined flavor profile.
