
Lagoon Brewery
A lagoon known as "Fukushima Lagoon" is located in the northern part of Niigata Prefecture. The lagoon reflects the majestic five-head mountain range on its surface, offering a picturesque waterfront that preserves Japan’s natural beauty across all seasons. Recognized as one of the "100 Best Natural Plant Habitats in Japan," it serves as a vital ecosystem, providing a sanctuary for various wildlife species. It is considered Japan’s premier location for white cranes.
In 2021, a small sake brewery was established on the shores of Fukushimagata Lagoon. Historically, obtaining a new sake manufacturing license had been nearly impossible due to stringent legal requirements. Entering the sake industry typically required acquiring an existing brewery, a process that posed significant financial and logistical challenges. As a result, the industry saw very few new entrants, which posed concerns for its long-term sustainability.

Sake is not only a representation of Japan’s rich natural environment and culture but has also gained recognition internationally under the name "SAKE." However, despite its growing global appreciation, many sake breweries within Japan continue to struggle. In the spring of 2021, a regulatory change made it possible, under specific conditions, to obtain a new sake manufacturing license. The primary condition stipulated that production must be limited to sake intended for export. Despite this restriction, the policy change was considered a significant step forward, marking the first time in years that new brewers could legally enter the market. The decision reflected a shift in governmental policy, paving the way for fresh innovation in the sake industry.
Recognizing the importance of domestic recognition before expanding abroad, the brewery also pursued a license for "other brewed sake." This particular license allowed the production of turbid sake made from rice and rice koji, along with other creative variations that experimented with unique ingredients and brewing methods. With this flexibility, the brewery developed sake that adhered to traditional techniques while also crafting innovative, category-defying products for both domestic and international markets. With a commitment to "delivering diverse and impressive flavors," Lagoon Brewery operates with a focus on "small-scale craftsmanship" and "sustainability." The ultimate goal is to create ripples within the industry—no matter how small—just like patterns on a lake’s surface. If, one day, sake can become a common language that connects people worldwide, the brewery’s mission will have been fulfilled.
