Yucho Shuzo is a distinguished sake brewery located in Gose City, Nara Prefecture, Japan. Established in 1719, it has been producing sake for over 300 years in an area often regarded as the birthplace of refined sake. Yoshihiko Yamamoto is the 13th generation of brewers and has a deep knowledge of brewing history and techniques, which he sources to pioneer new processes for the craft. The brewery is nestled amidst towering mountains, cascading waterfalls, and pristine rivers, creating an ideal environment for sake production.
Yucho Shuzo utilizes spring water sourced from Mount Kongō, situated between Nara and Osaka, drawn from two deep wells on their property. This water is notably hard, rich in minerals, which imparts a distinctive character to their sake. The brewery is renowned for its innovative Kaze no Mori ("Wind of the Woods") series, introduced in 1998 by the 12th-generation brewer, Chobei Yamamoto. This line emphasizes regionality and freshness, offering unfiltered, unpasteurized, and undiluted sakes that capture the essence of freshly pressed sake. Mr. Yamamoto likens the lively character of the wind to that of his Sake, which has a slight effervescence and fresh yet rich and complex profile.
