Tatenokawa Sake Brewery, established in 1832, is located in Sakata City, Yamagata Prefecture, Japan. In 2010, it became the first brewery in Yamagata to exclusively produce Junmai Daiginjo sake, the highest grade of sake, demonstrating a steadfast commitment to quality and excellence. The brewery is led by sixth-generation brewer Sato Jumpei, who has articulated a ""100-Year Vision"" aimed at propelling Tatenokawa into the ranks of the world's premier sake producers. This vision includes pioneering efforts such as achieving a 1% rice polishing ratio with their ""Komyo"" sake, a feat that showcases their dedication to innovation.
Tatenokawa benefits from the natural resources of the Shonai region, utilizing pristine water from the surrounding mountains and locally sourced rice, particularly the Dewasansan variety. This integration of local ingredients contributes to the distinctive character of their sake. Tatenokawa's unwavering focus on Junmai Daiginjo sake and its pursuit of perfection have solidified its reputation as a distinguished and forward-thinking brewery in the sake industry.
