Senkin Sake Brewery, established in 1806, is the oldest operating brewery in Tochigi Prefecture, Japan. Located in Sakura City, the brewery is now managed by the 11th-generation Usui brothers, Kazuki and Masato. Kazuki, with a background as a master of wine, has infused innovative approaches into the brewery's operations, while Masato serves as the Toji brewmaster.
Senkin embraces a ""domaine"" concept, emphasizing the importance of terroir in sake production. They cultivate their own rice in fields irrigated by the same underground water source used in brewing, ensuring a harmonious expression of the local environment in their sake. This approach reflects their commitment to producing terroir-oriented sake that embodies the unique characteristics of their locale.
Under Kazuki Usui's leadership, Senkin has pioneered the production of sake with higher acidity levels, drawing inspiration from the crispness found in certain white wines. This results in sakes that offer a refreshing, palate-cleansing experience, distinguishing them from more traditional, low-acidity varieties.
Additionally, Senkin has reintroduced traditional brewing methods from the Edo period, including the use of wooden vats and natural fermentation processes without added yeast, aiming to recreate historical sake profiles with a modern twist.
