Matsumoto Shuzo is a historic sake producer situated in Kyoto's Fushimi Ward, an area celebrated for its pristine groundwater ideal for sake brewing. The brewery's origins trace back to 1791 when Jihei Matsumoto established the brewery in Kyoto's Higashiyama district. In 1922, seeking superior water sources, the brewery relocated to its current location in Fushimi. At the heart of Matsumoto Shuzo's operations there is a deep respect for Kyoto's rich food culture and a commitment to preserving local traditions. The brewery emphasizes the use of premium rice varieties, notably Yamada Nishiki from Hyogo Prefecture's Tojo region and Gohyakumangoku from Toyama Prefecture. The brewing process is predominantly manual, ensuring meticulous attention to every single brewing stage. The water utilized in their sake production is sourced from the subterranean streams of the Momoyama Hills, contributing to the distinctive and refined flavors of their sakes.
The brewery's architectural structure refers to the Taisho era design, including a red-brick warehouse and an octagonal chimney. These buildings have earned designations as both a Heritage of Industrial Modernization and a Tangible Cultural Property of Japan. Currently, the brewery is led by Soichiro Matsumoto, the 11th generation of the Matsumoto family. With a background at Honda Motor and experience in promoting Formula 1, he brings a unique perspective to the brewery. Under his leadership, Matsumoto Shuzo continues to honor its rich heritage while embracing innovation, aiming to connect people with the blessings of nature through the art of sake brewing.
