Kuramoto Shuzo is a family-run sake brewery located in the Tsuge Hayama-cho area of Nara City, Nara Prefecture, Japan. Established in 1871, the brewery has been producing sake on the same site for over 150 years, blending traditional methods with modern techniques. Situated approximately 25 kilometers from the center of Nara City, the Kura is nestled in a serene, mountainous region. This tranquil setting provides an ideal environment for sake production, offering pristine natural resources essential for brewing.
The brewery is currently led by Mr. Takashi Kuramoto, the seventh-generation director and master brewer. After completing his studies at an agricultural university and gaining experience in other companies, Mr. Kuramoto returned to his family business. He emphasizes the importance of the rice fermentation period, believing that time is crucial to achieving a refined and smooth flavor in their sake. Kuramoto Shuzo is known for its commitment to traditional sake brewing methods. The brewery collaborates with Shoryakuji Temple, recognized as the birthplace of refined sake, to produce "Bodaimoto" sake. This method involves cultivating lactic acid bacteria naturally, a technique that dates back centuries and contributes to the unique characteristics of their sake. A key element in Kuramoto Shuzo's sake production is the use of high-quality natural water sourced from the surrounding mountains. This pure water is vital in creating the brewery's distinctive and refined sake flavors.
