Hayakawa Brewery, established in 1915, is located in Komono Town, Mie Prefecture, Japan. Nestled at the foot of the Suzuka Mountains, the brewery benefits from the pristine natural environment, which significantly influences the quality of their sake. The brewery is led by Toshihito Hayakawa, who serves as both the representative and chief brewer. In 2009, he became the fourth generation of the Hayakawa family to assume the role of chief brewer, coinciding with the launch of their "Tabika" brand. This dual role ensures a deep connection to traditional brewing methods while allowing for innovative practices. Hayakawa Brewery is committed to producing high-quality sake by investing in state-of-the-art facilities and equipment. Their dedication to excellence is evident in their products, which reflect the unique natural environment of Komono Town. One of their notable offerings is the "Tabika Junmaishu," a pure rice sake known for its velvety rice flavor and consistently smooth mouthfeel. This sake is delightful even when served at room temperature, and its acidity mellows over time, enhancing its compatibility with a wide range of culinary delights. Hayakawa Brewery's commitment to traditional methods and high-quality ingredients results in sakes that embody the unique natural environment of Komono Town.
