Fujioka Shuzo is a distinguished sake brewery located in the historic Fushimi district of Kyoto, Japan. Established in 1902, the brewery has a rich history of sake production. After a brief closure in 1997 following the passing of the previous owner, the brewery was revitalized in 2002 by Masaaki Fujioka, who trained for three years to master the art of sake brewing before reopening the family business.
Fujioka Shuzo is renowned for its dedication to crafting high-quality junmai sake under the brand name "Sookuu," which translates to "Blue Sky." This name embodies the brewery's philosophy of offering a sense of relief and clarity, much like gazing up at a clear blue sky. The brewery emphasizes the use of local ingredients, including underground water sourced from Fushimi, known for its purity and softness, contributing to the delicate flavor profile and silky texture of their sake.
