Don’t Stop Noto Sake!” is a recovery initiative led by Yoshida Shuzo, the brewery behind the brands Tedorigawa and Yoshidagura in Hakusan City, Ishikawa Prefecture and camo Co., Ltd., a company dedicated to sharing the joy of Japanese sake and its culture worldwide.

The project was launched in response to the damage caused by the 2024 Noto Peninsula Earthquake, which left many sake breweries in the region struggling to continue production. Its goal is to support these breweries by building a sustainable support system: working with sake makers across Japan to create both original and collaborative brews. Proceeds from sales are returned directly to the affected breweries, helping to fund their recovery and operations.

The project began in January 2024, followed by a second phase in June, and has received strong support from the community. So far, 2,783 supporters have contributed over 52.4 million yen, resulting in the creation of 20 different collaborative sake releases.


Haccoba collaborated with Hiyoshi Shuzo, a sake brewery in Wajima City, Ishikawa Prefecture, to produce this sake.
After visiting the site and holding numerous discussions, they decided to use ‘Noto salt’ as the key ingredient including local yeast from Kanazawa, which is not normally used to brew the sake.

The salt used is produced at Wajima's traditional salt fields that were destroyed by the earthquake, making this salt a rare and elusive ingredient.

Representative Sato drew inspiration from his favourite Noto ‘salt soda’ and the beer-making method ‘Gose,’ aiming to create a sake that evokes the refreshing sea breeze.

By using coriander seeds, a spice commonly used in Gose, as an accent, the citrus-like aroma enhances the refreshing quality while also adding complexity to the taste.
The umami of the rice and the minerality from the salt make it a smooth and easy-to-drink sake.

It depends on the sake variety. Most sake is best consumed within one to two weeks if kept in the fridge. After that, delicate varieties such as junmai ginjō and junmai daiginjō quickly lose their fruity, floral aromas. Sparkling sake is best enjoyed within one to three days after opening, as it loses carbonation quickly.

Yes. Sake should always be stored in the fridge at a temperature below 8°C. Refrigeration is especially important for nama-zake and to preserve the delicate freshness of ginjō sake. Warm temperatures accelerate oxidation and spoilage.

Enjoy it while it’s fresh! Most sake is best consumed within about a year of leaving the brewery. Nama-zake, in particular, tends to lose its vibrant character after just a few months. Ginjō styles generally have a shorter shelf life than honjōzō and junmai varieties, and are best enjoyed within around ten months.

Sake generally has a higher alcohol content than beer or wine, ranging from 12% up to 18% ABV. The average is around 14.5%.

Yes. Our strict cold-chain import process is essential. All sake is shipped directly from breweries in Japan under strict quality control. It travels in refrigerated containers from Yokohama to Hamburg and is carefully handled until it reaches Berlin, where it is stored in our temperature-controlled cellar.
