A unique aspect of Abe Shuzo is its tradition of "Uchi-Toji," where the role of the master brewer (Toji) has been passed down through generations within the Abe family, with fathers directly instructing their sons about the art of sake brewing. In 2015, the brewery experienced a revival under the leadership of its sixth-generation head, Yuta Abe. Returning to Kashiwazaki, he aimed to create a brewery that the local community could cherish. Abe Shuzo emphasizes using local resources, exclusively utilizing Niigata rice and yeast in their brewing process. They also focus on sustainability by repurposing sake lees into products like cola and fertilizer for local farms. The brewery's philosophy centers around "enjoying fermentation," driven by intellectual curiosity and a commitment to crafting what they desire while appreciating the time and effort involved. This approach aims to produce "overwhelmingly delicious" products. Their products are characterized by traditional brewing methods and the use of soft water from Kashiwazaki, resulting in a soft entry and a smooth aftertaste, making their sake easy to enjoy.
